BEEF STROGANOFF 
1/4 c. flour
1/2 tsp. salt
1/8 tsp. pepper
1 1/2 lb. beef (sirloin or top round)
1/4 c. shortening or oil
1 (10 1/2 oz.) can beef broth or consomme (I prefer 1/2 c. water and 1/4 c. wine)
3 tbsp. ketchup
1 tbsp. Worcestershire
2 tsp. prepared mustard
1 c. sour cream or less

In plastic bag combine flour, salt, and pepper. Add beef and shake to coat. in large skillet, heat oil. Add meat and cook until brown. add broth, water, ketchup, Worcestershire sauce and mustard and wine. Cover; simmer about 45 minutes or until tender. Stir in sour cream. DO NOT BOIL. Serve over rice, noodles, or pasta.
