2 lb. frozen hash browns 1/2 c. diced onions 1 c. cream of chicken soup 1 c. sour cream 1 stick melted butter 8 oz. Cheddar cheese, grated Salt and pepper to taste
Mix all ingredients and add to potatoes. Pour into a 9x13 inch pan. Bake at 375 degrees for 1 hour. Can be made ahead and refrigerated.

This recipe is so good and so easy to make. It's what I call and "on hand" recipe as the ingredients are what the average household keeps "on hand" at all times. I made it for a "family breakfast" of about 16 people and it was gone before I even sat down. Definitely one to enjoy over and over.
