EASY PINEAPPLE UPSIDE-DOWN CAKE 
9 oz. can crushed pineapple
1/4 c. soft butter
1/2 c. brown sugar, packed
1 c. sugar
3 tsp. baking powder
1 tsp. salt
2 c. sifted flour
1/3 c. soft shortening (part butter)
1 egg
1 c. milk
1 tsp. vanilla

Heat oven to 350°F. Grease a square 9 x 9 x 3/4 inch pan or a 10 inch skillet. Mix undrained pineapple, butter, brown sugar, and spread in bottom of pan or skillet. Sift flour, sugar, baking powder, and salt into a bowl. Add shortening, egg, milk, and vanilla. Beat 2 minutes on medium speed or 300 vigorous strokes by hand. Scrape sides and bottom of bowl constantly.

Bake 45-50 minutes.
