GREEN TOMATO PICKLES 
2 qt. green tomatoes, washed & sliced
6 onions, peeled & sliced
2 green peppers, remove seeds & chop
5 ribs celery, cut in sm. pieces
1/3 c. plain salt

SPICE BAG:

3 (2") sticks cinnamon
1 tbsp. whole cloves
1 tbsp. allspice

SYRUP:

2 c. vinegar
2 c. sugar

Layer 2 inches of vegetables in large bowl and sprinkle with salt. Repeat until salt and vegetables are used. Let stand overnight. Drain and add: 2 cups vinegar and 4 cups water. Bring to boil, cook slowly for 20 minutes. Drain again, discarding all liquid.

Combine 2 cups vinegar and 2 cups sugar, add spice bag and simmer 5 minutes. Add vegetables and simmer 10 minutes or until tomatoes are tender. Pack in sterilized jars.
