SPICED FRESH APPLE MUFFINS 
2 c. flour
1/2 c. sugar
4 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. salt
1 egg
1 c. milk
4 tbsp. melted butter
1 c. finely chopped apple

Sift dry ingredients. Add milk, egg and melted butter. Beat well. Fold in chopped apple. Fill 1 1/2 to 2 inch muffin tins 2/3 full. Sprinkle with cinnamon-sugar.

Cinnamon-sugar is equal amounts of each. Bake at 425 degrees for 15 to 25 minutes.
