2 (8oz) cream cheese, softened
1 cup sugar
1 tsp. vanilla extract
Nilla wafer crackers
blueberry or strawberry filling
Mix cream cheese, sugar, one egg, and vanilla extract, until smooth. Then, add second egg.
Place one Nilla cracker in each cupcake liner. Pour 1-2 tablespoons batter into each liner.
Bake for 20 minutes at 300°F. Refrigerate for 2 hours or over night then add blueberry or strawberry filling on top. Makes 15 cupcakes.
