|TOASTER OVEN MEATLOAF|
1 lb ground beef
1 small onion, chopped
1 small green/red pepper, finely chopped
1 slice bread
Italian herbs, any kind
5 tbsp. spaghetti or pizza sauce
Preheat toaster oven to 400°F.
On a small plate or in a bowl, soak slice of bread in milk.
In a medium bowl, spread beef evenly. Cover with onion, pepper, herbs. Tear bread slice up and add to the bowl, too.
Knead like bread dough (or just mash it all together). Cover mini loaf pan sauce (saving 2 tablespoons for topping). Put a few drops of water in the pan. Form the beef into a loaf to fit the pan you have. Cover with foil.
Bake at 400°F approximately 1 hour. Remove foil, spread 2 tablespoons sauce on top, return to toaster oven and bake for another 15 minutes.
