1015 SURPRISE CASSEROLE 
1/4 c. + 2 tbsp. butter (divided)
3 med. 1015 onions (chopped)
2 c. Swiss cheese (grated and divided)
1 c. crushed saltine crackers (divided)
2 eggs
3/4 c. light cream or half and half
1 tsp. salt
1/8 tsp. freshly ground black pepper

Preheat oven to 350 degrees.

Melt 1/4 cup butter in large skillet and saute onions over medium heat until tender. Place half the onion mixture in a 1 1/2 quart deep dish pie pan. Sprinkle 1 cup cheese and 1/2 cup cracker crumbs over onions. Repeat layers of onions and cheese.

Beat eggs with cream, salt and pepper. Pour batter evenly over onion mixture. Melt 2 tablespoons butter in skillet and stir in remaining 1/2 cup crumbs. Lightly brown over medium heat, then sprinkle toasted crumbs over casserole. Bake 25 minutes. Serves 6 to 8.
