SUPER MOIST CHOCOLATE CAKE
By far the most surprisingly deeelightful cake. This recipe is great for adults and for kids ages 3 and up.

1 1/2 cups of all purpose flour (or wholewheat flour)
3 tablespoons of sifted good quality cocoa
1 teaspoon baking soda
1 cup white or vegan brown sugar
1/2 teaspoon salt (optional)
5 tablespoons canola oil (or any veg. oil, even olive oil)
1 tablespoon white vinegar
1 teaspoon vanilla extract
1 cup cold water

Put your flour into mixing bowl, add cocoa, baking soda, vegan sugar and salt and mix well.

Make three deep holes in the dry mixture. Into one, pour the oil, into the next, pour the vinegar into the next, pour the vanilla.

Pour the water into the bowl, over all of this --- making a great big mess.

Mix the wet and dry ingredients together until there aren't any more lumps and pour into a 9 inch by 9 inch baking pan, two inches deep, it doesn't even have to be greased.

Bake at 350°F. for about half an hour, test with a fork.

Enjoy this delicious cake. You will be surprised at its moistness and richness!!!!! It can be cooled and iced with your choice of icing or can be enjoyed on its own. The batter can also be used to make cupcakes!!

Cooks Tip of the Day: For an instant cake, have the premeasured, premixed dry ingredients at hand, then simply add the wet ingredients when you want a fresh treat! It makes a great birthday cake! Hey, it even freezes well!

Preparation time: 15 min. + 30 min. bake.

Super Moist Chocolate Cake

Simple and delicious! Moist too, just like it said. I liked it because it was not super sweet but definitely tasty, and very easy to make. Surprisingly, I had all the ingredients at home (except the vegan brown sugar, so I used half regular and half Splenda). The whole wheat flour worked well and did not weigh down the cake like I thought it would. I am considering substituting unsweetened applesauce for the oil and see if it will turn out as well. Great with fresh strawberries or dusting of powdered sugar.

This was nice recipe and even good for vegetarians who don't take eggs, what I did was that I baked doubled the recipe and cut cake into two layers, added vanilla pudding in between and frosting on d top (white frosting). Would b better contrast and it tastes soooo yummy.. Everyone and kids love it very much :D

I may have found this recipe as much as a year and a half ago -- not really sure. What I do know is that it's my default cake now. I've spread homemade strawberry preserves on top, I've added cinnamon, I've added coffee (just substitute for the water), I've added chipotle powder, I've soaked it in caramel-- this cake works with so many variations.

A really successful (and easy) way to use this recipe is to put cubes of the cake into a serving dish (or individual dishes), sprinkle on mini chocolate chips, and then mix and add some instant chocolate pudding. You can put it in the fridge right away to chill, but I like to stir some sour cream and powdered sugar into a tangy icing, and add that on top.
