CORN COB JELLY | |
1 dozen medium sized red corn cobs 2 qts. water 1 (1 1/4 oz.) pkg. powdered pectin (Sure Jel) 3 c. corn cob juice 3 c. sugar Wash the corn cobs and cut into 4" lengths. Place in container, add 2 quarts water and bring to a boil. Reduce heat and boil slowly for 35 to 40 minutes. Strain the juice. Measure out 3 cups of juice into a large container. Add the Sure Jel and bring to a boil. Add sugar and again bring to the boiling point. Boil for 5 minutes. Skim, pour into sterilized jars or jelly glasses and seal. This is a sparkling, transparent, coral red jelly with a flavor very much like plum jelly. |
