VEAL CUTLET PARMESAN 
4 lg. veal cutlets, 1/2 inch thick
2 eggs
1/4 tsp. salt
1 tsp. pepper
1 c. bread crumbs
4 tbsp. grated cheese
1/4 c. oil
1 tsp. oregano
1 tsp. parsley
2 c. tomato sauce
5-6 slices Mozzarella cheese, thin sliced

1. Beat eggs well, add salt and pepper; set aside.

2. Mix bread crumbs with grated cheese, oregano, parsley.

3. Dip veal cutlets into the beaten eggs, then roll in bread crumbs. Fry on both sides until golden. Place cutlets in a baking dish. Pour tomato sauce over them. Place Mozzarella cheese slice on each cutlet. Bake at 350 degrees for 30 minutes.
