BANANA WAFFLES 
1 c. all purpose flour
1 1/2 tsp. baking powder
1/2 tsp. salt
2 egg yolks
1 1/4 c. milk
3 tbsp. butter, melted
1/2 c. mashed banana (1 med. banana)
1/4 c. chopped nuts
1/2 c. semi-sweet chocolate chips
2 egg whites
Sliced bananas
Vanilla or chocolate ice cream

Sift together dry ingredients. Beat egg yolks, milk, and butter together. Add all at once to the flour mixture, stirring until well blended. Fold in mashed banana, nuts and chocolate chips.

Beat egg whites until stiff; fold into batter. Bake in preheated waffle baker until steaming stops and waffle is golden brown and crisp. Top waffles with sliced bananas, ice cream, and Chocolate Cream Topping. Makes 10-12 servings.

CHOCOLATE CREAM TOPPING:

1/2 c. semi-sweet chocolate chips
1 tbsp. butter
1 (7 oz.) jar Marshmallow Cream
3-4 tbsp. water

Melt chocolate chips and butter. Stir in Marshmallow Cream. Thin with the water, adding only a tablespoon at a time, until desired consistency is reached.

This recipe is very good! I made them for breakfast so I simply omitted the chocolate chips, no ice cream, and didn't make the chocolate cream topping for a not so sweet version. Wonderful! We put peanut butter and syrup on these moist airy waffles and they were a great breakfast. This recipe most definitely does not have to be a dessert.
