LOBSTER THERMIDOR 
Meat of 1 lb. cooked lobster
3/4 c. light cream
2 tbsp. chopped mushrooms
4 tbsp. green onions
2 tbsp. white wine (any dry)
1 tbsp. plain bread crumbs
1 c. shredded Romano cheese
Salt and pepper

Saute mushrooms and green onions in small amount of olive oil until tender. Add dash of salt and pepper, light cream, lobster, white wine and 1/2 cup cheese. Cook on low heat until blended.

Pour in individual baking dish. Mix bread crumbs with remaining cheese and spread on top. Bake at 400 degrees until melted and golden brown.
