POLISH SAUSAGE AND ROASTED
POTATOES
 
1 lb turkey Kielbasa (about)
1 lb red new potatoes cut in half and scrubbed
1 medium onion, halved and sliced
a few cloves of garlic, minced
1 red bell pepper, diced
1 green bell pepper, diced
1 yellow pepper, diced
unseasoned breadcrumbs or "fish fry"
black pepper, to taste
1/3 cup melted butter (or margarine)

Preheat the oven to 350°F. Line a cookie sheet with parchment paper. Add the black pepper to the breadcrumbs. Coat the potatoes with the seasoned breadcrumbs (you really don't need much more seasoning than the pepper.)

Place the potatoes and vegetables on the cookie sheet. Drizzle the melted butter over the potatoes and vegetables.

Bake for about 30 minutes.

Meanwhile, cut the sausage into bite-size pieces and sauté until they are cooked through and hot.

When the potatoes are done, transfer to a serving dish and add the sausages. Stir to mix everything together.

Serve with a nice mixed salad.

I made a few modifications to this recipe, but didn't alter the original too much. I used everything except a yellow pepper which I didn't have and chopped everything into 1 inch pieces instead of dicing the veggies. After roasting in the oven for 30 minutes the potatoes still weren't done so I transferred the entire baking sheet, peppers, potatoes and all into the pan I used to cook the polish sausage. I pan fried it for about 5 minutes and added a bit of kosher salt and fresh ground pepper. After the potatoes were cooked through I mixed it together with the sausage. Everyone loved it, even my picky toddlers. Next time I won't use the breadcrumbs on the potatoes as they didn't really seem to do anything for the flavor, and didn't stay on them through the cooking process. I'll also replace the butter with olive oil. Overall, great flavor and will definitely make it again!

SOOOO good! I changed it up a little as well..left out bread crumbs, roasted the potatoes, peppers & added zucchini with olive oil & Mrs Dash for 30 mins, then pulled saute pan out of oven and added the kielbasa....really good! Thank you for the ideas.
