NISUA (FINNISH CARDAMON COFFEE BREAD) | |
3 1/4 c. milk 2 pkg. dry yeast 3 beaten eggs 1 1/2 c. sugar 1 1/2 tsp. salt 12 cardamon seeds, shelled and crushed 1/2 c. butter 12 c. flour Scald the milk and cool to lukewarm. Dissolve yeast in 1/2 cup warm water. Add yeast, eggs, sugar, salt, seeds and butter to the lukewarm milk. Add 12 cup sifted flour, 2 cups at a time, until smooth. Place on floured board, using 1/2 to 1 cup additional flour. Knead thoroughly until smooth and elastic. Place in greased bowl. Cover and let rise in a warm place until double in bulk. Punch down and let rise again. Divide in 12 pieces and braid. Makes 4 braided loaves. Bake at 350 degrees for 35 to 40 minutes. GLAZE: 6 tbsp. hot coffee 6 tbsp. sugar 1 tbsp. butter Combine and brush over hot loaves. |
