1 (4 oz.) package chipped beef, shredded
1 large onion, sliced
2 cloves garlic, minced
2 tablespoons extra virgin olive oil
2 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups carrots, thinly sliced
2 cups potatoes, thinly sliced
2 cups water
1 vegetable or beef bouillon cube or 1 tsp. beef soup base

Submerge beef in a saucepan of boiling water or beef broth and allow to stand for 5 minutes; drain. Pour olive oil into a large frying pan, sauté onions, beef, and garlic. (For extra flavor, 1 tablespoon of butter may be melted into 1 tablespoon of olive oil). After beef has browned, pour off excess grease.

Stir in flour and seasonings. Add remaining ingredients and heat on high for 1-2 minutes. Cover, reduce heat to low and simmer for 5 minutes.

Line a 2-quart casserole dish with a single pastry crust. Pour beef mixture into casserole and top with a pastry circle top.

Bake in a preheated 425°F oven 25 to 30 minutes.

Serves 6.
