PEAR TART 
1 (10 inch) pie shell, unbaked
1 c. plus 3 tbsp. sugar
6 tbsp. flour
3 eggs
1 1/2 sticks butter
2 Bartlett pears, peeled and cored and quartered lengthwise
Powdered sugar

Combine granulated sugar, flour, and eggs in large bowl and whisk until smooth. Melt butter in medium skillet over high heat until foamy and golden brown. Slowly whisk melted butter into sugar mixture. Cut pears crosswise into slices 1/8 inch thick.

Gently open slices into fan shape. Arrange pears in crust in flower petal pattern. Pour melted butter mixture, slowly, over pears. Bake at 375 degrees until crust and filling are brown, 45-60 minutes. Serve warm or at room temperature. Just before serving, sprinkle top with powdered sugar, if desired.
