JAMAICAN BANANA BREAD 
2 c. flour
1 c. sugar
1 egg, beaten
2 tsp. baking powder
1 tsp. baking soda
1/4 c. raisins
3 lg. ripe bananas
2 tsp. vanilla
1 tsp. cinnamon
1/4 tsp. nutmeg
Pinch of salt
1 stick butter, softened
1/2 c. milk
1/2 c. chopped walnuts (optional)

In a large bowl cream together the butter and sugar. Add the egg and mix well. Beat in the mashed banana. Sift together the dry ingredients and add while mixing milk and vanilla. Add raisins. Pour into a greased and wax paper-lined loaf pan (9x5x3). Bake at 350 degrees for 1 hour or until tests done.
