ENCHIRITOS 
1 lb. ground beef
1/4 c. chopped onion
12 oz. refried beans
2 oz. canned chopped green chili peppers
2 (10 oz.) cans enchilada sauce
1 pkg. flour tortillas
12 oz. grated Cheddar cheese

Preheat oven to 350 degrees. Grease bottom of 9 x 11 inch baking dish. In medium skillet, brown ground beef with onion. Stir in refried beans, green chili peppers and 1 can enchilada sauce. Heat until warm. Spoon 3 or 4 tablespoons of meat mixture onto a tortilla and sprinkle with cheese (reserve 6 ounces of cheese for topping).

Fold tortilla around mixture and place in baking dish. Repeat with remaining meat mixture. Top with 1 can enchilada sauce and remaining grated cheese. Bake for 15-20 minutes. Makes 8-10 enchiritos.

I made this and it is amazing--especially since I tweaked it to be healthier. I used only half a LB ground beef (90% lean, which I sautéed with the onions and a little beef consommé for flavor), then drained it and added beans and olives (instead of chiles, 4 oz.) I only added one cup of fat free refried beans, not 12 oz. I used 8 whole wheat fajita-size tortillas. I distributed 2 cups fat free shredded cheese throughout the recipe, topped with sauce and cooked as directed. 3 Tablespoons of filling per enchirito.
