2 c. or more cooked diced roast beef, fat removed
1 very lg. onion or 3 med. sliced
3 cloves garlic, minced
2 c. water
5 or 6 c. raw potatoes (diced)
If potatoes are cooked, use 2 tablespoons Watkins beef soup and gravy mix. Saute onions and garlic in a little lite oil. When onions are clear, add diced beef, salt to taste, pepper, and 2 cups water. Cook approximately 10 minutes, stirring. Then add potatoes. If raw, add water to almost cover potatoes.
Cover and simmer at least 20 minutes on low until water is cooked out. Add less water if you use cooked potatoes.
