MALFATTI (Italian, pasta) 
Olive oil
1 tbsp. chopped garlic
1/2 c. chopped parsley
1 tbsp. fresh thyme
Pinch dry thyme
2 boxes chopped frozen spinach
1 lb. grated Mozzarella cheese
2 c. French bread crumbs (or more)
3 eggs, beaten
1 tsp. salt

Saute parsley, garlic and thyme in oil.

Slightly cook spinach - drain well and chop. Mix salt and bread crumbs. Mix all ingredients well and add eggs.

Roll into little sausages and roll in flour. Squeeze again so flour will cling and not cook off.
