RED BEET CHOCOLATE CAKE 
1 1/2 c. sugar
3 eggs
1 c. oil
1 1/2 c. beets (sieved)
2 sq. melted chocolate (3 tbsp.)
1 3/4 c. flour
1 1/2 tsp. baking soda
1/4 tsp. salt
1/2 tsp. vanilla

Cook beets and sieve or blend. Combine sugar and eggs; add oil, beets and chocolate. Sift flour, soda and salt and add vanilla to other ingredients.

Bake at 350 degrees for 25 to 30 minutes. Use 9 x 13 pan. Cool and frost with Beet Cake Frosting.

NOTE: 2 (4 1/2 ounce) jars of baby food beets can be used.

BEET CAKE FROSTING:

1/4 c. milk
1/4 c. sugar
3 tbsp. butter
1/2 c. chocolate chips

Cook milk, butter and sugar to a rolling boil. Then boil 30 seconds. Remove from heat. Add chocolate chips; beat until smooth. Pour on cake while hot; frosting will be thin, but sets fast.
