OAT FLOUR PANCAKES 
2 c. oat flour
2 eggs
2 c. milk or water
1/2 c. oil
3 tsp. baking powder
1/2 tsp. salt, optional
For waffle mix: Add 1 tsp. vanilla

Warm pan or griddle to medium with 1 teaspoon butter or oil. Add dry ingredients together and mix lightly. Next add milk and water; stir. Add oil and 1 egg at a time. Mix thoroughly. Pour 1/2 cup mix at a time.

With the addition of xanthan gum, these are great. Without it they will not hold together. Flavor is great!

This is okay without adjustments, just bland and too runny making thin pancakes. I added 3/4 cup more oat flour and one heaping tablespoon of coconut sugar. With the changes, they are amazing.

I adjust recipe by looking at everyone's comments, they were yummy! I only added 1 cup milk and them added 2 tbsp of honey. After I mixed them I let them "rest" for 5 minutes to rise up. They held together great and weren't too thin.

Delicious recipe! I've been making these every weekend for a few years now. I recommend letting the batter sit for about 10 minutes before you cook for a thicker batter and pancakes/waffles that don't crumble as easily. For a yummy hint of coconut, use melted coconut oil!

Made these using coconut milk & coconut oil. They turned out great once I realized they have to be almost fully cooked before flipping, otherwise they would just fall apart. I did use cinnamon & vanilla extract and they tasted like oatmeal cookies :)

These came out quite good. I tripled the recipe but only added around 2 1/2 cups of water (not milk), and they were just a little thick, which made turning them very easy. The kids want me to make these every day!

These pancakes were very thin. Way too much oil and possibly milk. I'd cut the oil in half and milk as well and see how they turn out.
