RHUBARB MUFFINS | |
1 1/4 c. brown sugar 1/2 c. oil 1 egg 2 tsp. vanilla 1 c. buttermilk 1 1/2 c. diced rhubarb 2 1/2 c. flour 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt Combine first 6 ingredients into a bowl. In a separate bowl combine remaining ingredients. Stir first mixture into second mixture until well blended. Spoon batter into muffin cups; scatter topping over muffins (see below). Bake at 400 degrees for 20 minutes. TOPPING: 1 tbsp. melted butter 1/3 c. sugar 1 tsp. cinnamon Makes 18 muffins. |
