POTATO CANDY 
1 med. Irish potato, cooked and peeled
1 med. jar peanut butter (smooth or crunchy)
1 1/2 boxes confectioners' sugar

Boil potato until soft. Pour off water and mash well. Add confectioners' sugar, gradually. Then add peanut butter. NOTE: dough will get stiff. Blend well. Press in oblong pan (13 x 9 inches) and refrigerate. When set, cut into squares.
