CILANTRO PESTO 
3 c. cilantro leaves
5 garlic cloves
1/4 c. olive oil
1/4 c. iced water
8 oz. Feta cheese
1/2 c. walnuts or pine nuts
2 raw jalapeno peppers

Combine all ingredients in a food processor and blend until mixture is the consistency of a thin mayonnaise. Serve chilled as a sauce for fish or chicken.

This is a fantastic recipe! I love how we can BE HEALTHY by preparing and eating REAL foods.

I substituted cayenne pepper powder for instead of raw jalapenos.

We layered whole wheat noodles with stir-fried chicken and vegetables. Then piled lots of Celantro Pesto, and topped it with lots of Kalamata olives.
