|CONFETTI BEANS AND RICE WITH CHICKEN|
1 cup MINUTE® Brown Rice, uncooked
2 tsp. Dijon mustard
1/2 cup light Caesar salad dressing
1 can (15 oz.) black beans, drained, rinsed
12 oz. cooked, diced chicken
1 can (11 oz.) Mexican-style corn, drained
4 green onions thinly sliced
4 large tomato halves, hollowed out
spinach leaves, optional
Prepare rice according to package directions.
Combine Dijon mustard and Caesar salad dressing in large bowl.
Toss in rice, beans, chicken, corn and green onions. Fill tomatoes with rice mixture. Chill or serve at room temperature.
Garnish with spinach leaves, if desired.
