ZEPPOLE 
1 c. flour
2 eggs
2 tsp. baking powder
Pinch of salt
1 1/2 tsp. sugar
1 c. Ricotta cheese
1/4 tsp. vanilla
Corn oil for frying

Good and easy donut.

Beat eggs slightly; add remaining ingredients except oil. Beat gently until combined. Batter will be sticky.

Drop by half tablespoons (push off batter with another spoon) into deep oil heated to 375°F. Fry a few at a time; until zeppole turn over by themselves and are golden brown, about 3 minutes.

Drain on paper towels and roll in confectioners' sugar.

I doubled the recipe and it made 20 fairly large zeppole about the size of tangerines. I lowered the temperature on the oil just a bit so they would cook thru without browning too much. Also used part skim ricotta. Drained them with a slotted spoon and let them rest on paper towels, so they weren't greasy. Made them earlier in the day brought them to a labor day bbq and reheated them in the oven later for dessert. Delicious they disappeared fast!!!!
