PUMPKIN DOUGHNUTS 
1 1/2 cups all-purpose flour
1/3 cup sugar
1/2 tsp. salt
2 tsp. baking powder
1/4 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. nutmeg
1/2 cup canned pumpkin
1/4 cup milk
2 tbsp. oil
1/2 tsp. vanilla
1 egg

Blend first 7 ingredients well. Combine remaining ingredients and stir into dry ingredients until moistened. Then fry in hot grease (dropped by tablespoon). Mix 1/2 cup sugar and 1 teaspoon cinnamon for topping. Roll hot doughnuts in topping.

These did turn out great! They puffed up nicely...i would use a mellon baller next time for a more uniform appearance - got over 18 little donut/donut bites out of the batter. Thank you for sharing!
