BAILEY'S IRISH CREAM CHOCOLATE
CHIP COOKIES
 
1/2 c. butter
1/2 c. granulated sugar
1/2 c. brown sugar
1 egg
1 tsp. vanilla
1/2 c. Bailey's original Irish cream
2 1/4 c. cake flour
1/2 tsp. baking soda
1/2 tsp. salt
1 (6 oz.) pkg. semi-sweet chocolate chips
3/4 c. coconut
1/2 c. chopped pecans

Cream butter, sugars and egg until fluffy. Add vanilla and Bailey's Irish cream. Mix dry ingredients and blend into creamed mixture. Add coconut, nuts and chips. Drop onto ungreased baking sheets. Bake at 375 degrees for 8-10 minutes. Cool.

Loved this recipe. I made them for St. Patrick's Day and they were a big hit. I put some green food coloring in but I won't do that again. Not very appetizing looking. I did double the chocolate chips.

Fantastic! You can really taste the Baileys and I was worried all the components wouldn't work together but they really did. These are like a shortbread cookie so they do not get very big or spread out so I recommend pushing them down a little with either your hand or a fork. I made mine the size of a tbsp and baked them for 8 minutes and they were perfect, huge hit. Wish directions were more specific, hard for new bakers to follow so I can't give it 5/5. ~ Suzie the Foodie

These were a hit at the St. Patrick's Day party. I added 1/2 cup of English toffee bits and called them Black and Tans.
