JELLO POKE CAKE 
1 white or yellow cake mix
1 (3 oz.) pkg. orange Jello (or your favorite flavor)
1 c. boiling water
1/2 c. cold water

Prepare cake mix. Bake at 350 degrees 30 to 35 minutes. Cool in pan 15 minutes. Poke holes in cake. Dissolve Jello in boiling water. Add cold water and spoon over cake. Chill 3 or 4 hours. Top with Cool Whip.

I love this cake! We use strawberry or cherry jello. It's great for summer, very light. My mom used to make this for me when I was little and now I make it for my kids. It's a great recipe!

I have been making this as a two layer cake for 40 years as a Christmas Cake. I use cherry jello for the 1st layer and lime for the 2nd layer. I ice with Cool Whip.

I decorate the cake with colored sugar... candy canes... whatever moves me at the moment. I place on a beautiful pedestal cake plate with lid... place in the freezer.. you can set this out at the beginning of your Christmas Dinner and by the time to eat dessert it will be thawed.

My family loves it and insists I make the "Christmas Cake" every year. While I only do Christmas you could do many variations for Easter and other holidays.
