“OATMEAL BANANA COOKIES” IS IN:

OATMEAL BANANA COOKIES 
1/2 cup (1 stick) butter
1/2 cup vegetable shortening
1 cup sugar
3 eggs, beaten
2 1/4 cups all purpose flour
1 over-ripe banana
1 tsp. baking soda
1 tsp. salt
4 tbsp. milk, buttermilk or yogurt
1 tsp. vanilla or 1 tablespoon rum
1 tsp. McCormick's Banana Extract
2 cups rolled oats
1 1/2 cups raisins, soaked

Preheat oven to 375°F.

Soak raisins in milk and vanilla or rum for 10 minutes.

Using an electric mixer, cream together butter, shortening, sugar and eggs. Mash the banana and add to mixture. (Banana may be omitted - reduce recipe to 2 eggs instead of 3; reduce flour to 2 cups).

Stir together flour, baking soda and salt. Add gradually to above mixture.

Add banana extract to milk (if using). Stir in raisins and the flavored milk they soaked in. Add oats and combine mixture well.

Form cookies and place 1 inch apart on greased cookies sheets.

Bake for 12-15 minutes at 375°F watching carefully; reduce heat if cookies are browning too quickly. Some ovens get hotter the longer they are on, so you may need to turn down heat for later batches.

Variation: Add 3/4 cup chopped nuts. For added nutrition, add 2 tablespoons of wheat germ or 1/4 cup of wheat or oat bran plus another tablespoon or so of milk.

Nice and light, but not too much of a banana flavor. I would use some banana extract along with one overripe banana the next time I make them.

I used plain whole milk yogurt for the milk, and mini choco chips instead of raisins (not soaked), and made cupcakes/muffins. Excellent!

These cookies are so light and tender! There isn't too much banana flavor which is perfect for me! However, I found them to be a little dry. I think it was because of the type of oatmeal I used rather than the typical stuff you find in stores. I will definitely try it again but soaking my oatmeal a little first!

What a great soft cookie. I tried using cranberries and found that while I maybe should have soaked them a little longer in the milk, the outcome was still delicious!
