OATMEAL BANANA COOKIES
 

1/2 cup butter
1/2 cup Crisco non-hydrogenated shortening
1 cup sugar
3 eggs, beaten
2 1/4 cups all purpose flour
1 over-ripe banana
1 teaspoon baking soda
1 teaspoon salt
4 tablespoons milk, buttermilk or yogurt
1 teaspoon vanilla
2 cups rolled oats
1 1/2 cups raisins, soaked

Preheat oven to 375°F.

Soak raisins in milk and vanilla for 10 minutes.

Using an electric mixer, cream together butter, shortening, sugar and eggs. Mash the banana and add to mixture. (Banana may be omitted - reduce recipe to 2 eggs instead of 3; reduce flour to 2 cups).

Stir together flour, baking soda and salt. Add gradually to above mixture.

Stir in raisins and the milk they soaked in. Add oats and combine mixture well.

Form cookies and place 1 inch apart on greased cookies sheets. Bake 12-15 minutes at 375°F watching carefully; reduce heat if cookies are browning too quickly.
