FLAKY BAKING POWDER BISCUITS
2 c. flour, sifted
1 tbsp. sugar
4 tsp. baking powder
1/2 tsp. salt
1/2 c. shortening (Crisco)
1 egg
2/3 c. milk

Sift together flour, sugar, baking powder, and salt into as bowl. Cut in shortening with a pastry blender until mixture resembles coarse meal. Combine egg beaten with milk. Add to flour mixture all at once, stirring just enough with fork to make a soft dough that sticks together.

Turn onto lightly floured board and knead lightly 15 minutes. Roll to 3/4 inch thickness. Cut and place 1 inch apart on ungreased cookie sheet.

Bake at 425°F for 12 minutes or until golden brown.

Makes 12.

Flaky Baking Powder Biscuits

Yum! These biscuits were a big hit with my slightly fussy family. The only suggestions I have are to reduce the milk to 1/2 cup, because the dough was very sticky and to reduce kneading time from 15 minutes (?!) to a few minutes.

My 8yo DD helped a lot and when I rolled the dough too thin, she suggested we stack the pieces. Great idea! They puffed up, pulled apart beautifully and were terrific!

Fantastic biscuits! Light and fluffy but not cakey...just like my mom used to make and I didn't pay attention. A lesson to all you younger bakers out there!

This is a good recipe but if you were to add about a half teaspoon of baking soda, they will get even fluffier. I tried it on 2nd attempt, and wow.......Had seen Alton Brown suggest this on food channel show.
