POLISH POTATO DUMPLINGS
 

About 8 or 10 c. mashed potatoes
5 eggs
Flour, enough to roll
Salt to taste

Mix well. Make into dumplings and drop into boiling water until firm. Drain. Put in layers with sauerkraut. Add lard, butter or better still, the broth from duck, goose or turkey. Bake about 1 hour. Or, after draining dumplings, pour melted butter, salt and pepper to taste.
