PEACH JELLY 
3 lbs. peaches, fully ripe
1 box powdered fruit pectin
2 tbsp. lemon juice
5 1/2 c. sugar

Peel and pit fully ripe peaches, puree fruit in blender. Add lemon juice. Mix fruit pectin with 4 cups of blended fruit in large 8 quart saucepan. Place over high heat and stir until mixture comes to a full boil. Add sugar at once and bring to a full rolling boil, boil 1 minute stirring constantly. Remove from heat and let sit for a few minutes. Skim off foam with a metal spoon. Pour into jars and seal. Makes 9 (1/2 pint) jars.

This isn't jelly, this is peach jam. Jelly is made from just the juice of a fruit, and will be transparent when done. Fruit puree is not the same as fruit juice; you have to strain it to get juice.
