WHOLE WHEAT APPLESAUCE CAKE OR
CUPCAKES
 
1/2 c. oil
3/4 c. granulated brown sugar
1 c. applesauce
1 1/2 c. unsifted whole wheat flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 c. raisins (optional)

Oil and flour an 8 inch round or square baking pan or muffin tins. Cream the oil and sugar together and mix in the applesauce and baking soda. Add flour and cinnamon, blending thoroughly. Pour the batter into pan or make individual cakes in muffin tins. Bake at 375 degrees for 30 minutes for an 8 inch cake; about 20 minutes for cupcakes.

Love this recipe most healthy. I have added apricot, prunes, and pecans and it has come out to be good. Next would be try carrot and coconut cake with this recipe.

Great!! I used butter instead of oil for batch number 2 (ran out of oil) and made them mini and baked to perfection in 12 minutes. I made the applesauce at home when I made my son's baby food - ssooo easy and yummy!

this recipe should be called a muffin instead of a cupcake or cake... it is sweet enough and maybe with icing it could be considered a cupcake, but the texture is definitely a muffin in my opinion. Tastes good tho...I added dried cranberries instead of raisins..

Had to do some guesswork on the sizes of the dry stuff because I couldn't find the right size measuring spoons, but they turned out great!! My grandparents absolutely loved them.
