EASY LEMON BAKED CHICKEN 
4 boneless, skinless chicken breasts
1 egg, slightly beaten
1/4 c. lemon juice
4-6 tbsp. low-cal butter
Italian flavored bread crumbs

Preheat oven to 350 degrees. In an oven proof baking dish, melt 4 tablespoons of the butter. Meantime (and watch butter in oven) combine lemon juice and egg. Dip chicken pieces in liquid, then thoroughly coat with bread crumbs. When butter is melted, place coated chicken in baking dish and cover loosely with aluminum foil. Bake for about 20 minutes, then turn the pieces over and add more butter if needed. Bake an additional 20 minutes.
