MOM'S SOUR ORANGE PIE 
1 1/2 c. sugar
1/3 c. cornstarch
1 1/2 c. water
1/4 tsp. salt
3 egg yolks
3 tbsp. butter
1/4 c. sour orange juice
1 tbsp. grated rind

Combine and mix well the sugar and cornstarch in a heavy aluminum pan. Over medium heat, gradually add water and salt, stirring constantly, and bring to a boil. Boil for 1 minute until clear and thickened.

In a small bowl, slightly beat the egg yolks and pour some mixture over them and blend. Add egg mixture back into pan and bring to a boil. Boil 1 minute, stirring constantly. Stir in butter until melted and add the sour orange juice and grated rind. Cool and pour into a 9 inch prebaked pie shell. Top with meringue and bake until brown.

MERINGUE:

3 egg whites
1/4 tsp. cream or tartar
6 tbsp. sugar
1 tsp. vanilla

Beat egg whites until foamy. Beat in sugar, 1 tablespoon at a time and beat until stiff and glossy and add vanilla. Spread over filling and bake at 400 degrees 8 to 10 minutes.
