7 DAY SWEET PICKLES 
7 lbs. cucumbers
water to cover
1 quart vinegar
8 cups sugar
2 tablespoons salt
2 tablespoons mixed pickling spices

Wash cucumbers and cover with boiling water. Allow to stand for 24 hours, then repeat this process daily using fresh boiling water until the fifth day. On morning number 5, slice cucumbers into 1/4 inch thick rings.

Prepare a vinegar brine:

In a non-reactive saucepan, boil vinegar, sugar, salt and spices. Pour over cucumbers. Allow to stand for 24 hours.

The next morning, drain brine. Bring brine to a boil; add cucumbers.

Pack in sterilized jars and seal while hot.

Process 10 minutes in boiling water bath.

I have a very similar recipe handed down from my grandmother but it specifies that the 7 day process must be done in a crock. It is miraculous that this unlikely process can produce such crispy and delicious pickles, but it does! Don't bother with another recipe-it is worth the effort!

This recipe has been in our family for generations and my children continue to ask for it. A tip for those who don't like it setting for seven days is to do each step every 12 hours instead of 24 making it a 3 ½ days instead. My mom started this when she moved to a more humid climate so the pickles wouldn't get so slimmy and they are just as good.

This is a tried and true recipe for crispy 7 day sweet pickles, it's my go to recipe every harvest. If your cukes are a bit overripe then I start the first 24 hrs with boiling water, then add to that 1/2 Cup pickling salt and 1 Cup pickling lime. If using lime be sure to follow the next 24 hrs with rinsing them 3 times in cold water to remove the excess lime.

Just before making the brine take 2 cups of the vinegar and simmer 15 minutes with 5 chopped jalapeno peppers-seeds and all.
Drain through a fine strainer and enough vinegar to make the 2 cups back. You now have SWEET N HOT PICKLES. Ooh so good! I also use the 12 hour system.
