PORK BLADE STEAKS 
Pork blade steaks
Onion, chopped, for seasoning
1/4 c. brown sugar
3 tbsp. lemon juice
Ketchup OR
Worcestershire sauce

Place blade steaks in ungreased casserole dish. Sprinkle them with brown sugar, chopped onion, lemon juice, ketchup (or other seasonings) to the desired amount for your taste. Cover. Bake at 375 degrees for about 1 hour. Very tender and moist meat.

The flavor was great, however, the meat was tough... I cooked it less than the time indicated because it seemed as if it was getting overdone.... not tender at all.

This was very good. I combined all ingredients (used Worcestershire sauce), added a little beef broth, and a touch of dijon mustard, and a clove of garlic, poured it over the meat and, yum. It turned out very tender and very tasty!

Haven't tried this yet, but am planning on having it for dinner tonight. To ensure that the meat stays moist, try browning the front and back by frying it in a small amount of oil for a few minutes on each side, then put it in the oven. Browning the sides first will trap the juices inside ;-)

I changed the recipe a bit when I did it, but it came out GREAT! My family and friends are now begging me to make more. lol.

What I did:
Started out with a dry rub of spices on the steaks. Then for the onions, I sauteed them in a pan (You want to be sure to cut them pretty small). Cook em down til they are kind of clear and then add one clove of minced garlic to em. Let them cook down on med-low for about 5 mins to extract the flavor of the garlic, then you want to pour the onions over the steaks in your casserole dish. Then take some brown sugar and lightly sprinkle it over the onions. Top with a little butter. Then stick it in the oven for almost an hour.
The onions melt in your mouth and the brown sugar gives the steak a rich sweet taste. I served it with potato salad and green beans!! :D

Delicious.

Had 3 pork blade steaks (about 2lbs.) seasoned with salt, pepper, and red pepper on both sides before placing in casserole-like dish. Sauteed a half onion for a few minutes, then added a clove of garlic for a few more minutes. Set that aside while I pan-fried the steaks for a couple minutes on each side (per a user's suggestion above, in order to trap the juices). Sprinkled some brown sugar in casserole dish before replacing lightly-browned steaks in casserole dish, then distributed onions over them. Sprinkled brown sugar on top. Lathered a mixture of ketchup and soya sauce (didn't have Worcestershire sauce, but I love ketchup shoyu) then put covered and put in oven at 375°F degrees for about 55 minutes. Tender and moist, some bits fell off the bone! Family loved it, thanks so much!

Luseane's version fits the bill for pork steaks. I always like to sear meat in a bit of olive oil to trap juices during baking as several other readers suggested after cooking half a chopped onion. Used a glass corning ware to oven bake and YES it was very tender and made a wonderful companion with potatoes and broccoli. Thanks for recipe!

I am giving 5 stars, however, I did add my own twist in there. I poured some apple cider vinegar on the chops before adding the other ingredients. Used both ketchup and Worcestershire, shook in a jar (3 parts ketchup to 1 part Worc.) Salt and pepper to taste. DE-Licious! I will be making this again, hubby loved it too.

I really liked this recipe! I browned it first on both sides in a hot skillet with oil as suggested by other reviewers. I cooked about 2/3 of a pound (it was one pork blade shoulder steak.) so browned it first then seasoned with dried chopped onion (seasoning,) seasoned salt, brown sugar, ketchup, lemon juice and Worcestershire. Cooked for almost an hour in oven. Very yummy and tender, super easy, enjoyed a lot! Thank you

I thought this dish was delicious, but I also made some adjustments. Instead of sprinkling the steaks, I mixed the brown sugar, ketchup, red wine vinegar (I didn't have lemon juice), and some soy sauce together and made more of a marinade.Then I topped the steaks with chopped raw onion. I also had run out of aluminum foil so I could only partially cover the casserole dish. I cooked 2 steaks for 45 minutes, and they came out perfect.

So good. I used a large cast iron skillet to make 4 steaks. I diced the large onion and 3 cloves of garlic and browned the steaks in olive oil (1 tbsp.). Then in a large measuring cup I mixed the brown sugar (1/4 cup), tbsp. Worcestershire, ketchup (about 1/3 cup), and the zest and juice of two med lemons. I then took the browned steaks out of the pan and scraped the pan - onions, garlic and juices from the pan and mixed that also in the measuring cup. Then I put the steak back in the skillet, spooned the mixture on top of the steaks and baked in the 375°F oven for one hour. So excellent and the meat was super tender - what a great flavor. I bought some more of the steaks today at the grocery store today BOGO and they are very inexpensive.

I followed the recipe,sprinkled all the ingredients except onion over the top then smeared them together with a spatula and sprinkled onions over. Covered and baked 1 hr then let rest 10 minutes before uncovering.
Very good and easy, I didn't think extra browning, etc really needed.
