GRILLED SOY-LEMON HALIBUT 
3 tbsp. butter, melted
3 tbsp. soy sauce
2 tbsp. lemon juice
1 tbsp. sugar
1 tbsp. Worcestershire sauce
1/2 tsp. ginger
Shake of garlic powder
1/8 tsp. pepper
2 lb. halibut (orange roughy works well, too)

Place fish in a shallow baking dish. Combine remaining ingredients and pour over fish. Cover dish and refrigerate for 30 minutes, turning once. Remove fish, reserve marinade for basting. Place fish on lightly oiled grill, 4 to 6-inches from moderately hot coals. Cook for 4 to 5 minutes or until fish flakes easily.

Serves 8.
