Coarsely chop 2 loaves of hard bread in food processor, add 1 large onion, finely chopped, 3 tablespoons of fresh parsley, minced and 3 cloves of minced garlic. Add precooked turkey or chicken gizzards and heart of bird (cooked to a tender stage). Coarsely chop in food processor. Mix well. Add 1 pound of pork sausage fried golden brown and crumbly with 1 onion and 1 clove garlic. Add to above mixture the broth from the giblets to which 1/4 cup butter has been added. If you like your stuffing to hold together, add 1 or 2 beaten eggs.

Mix well and season to taste with salt, pepper and sage.

Stuff turkey as you normally would or line a loaf pan with foil and pack evenly and loosely with the stuffing. Spray or brush top of loaf with olive oil spray or brush with melted butter. Cover with foil and bake for 45-60 minutes, uncovering during the final 15 minutes of baking.

Makes 6-8 servings or enough to stuff a 12 lb turkey.
