1 (4 to 5 lb.) pork roast (washed and dried)
4 green onions, finely chopped
3 toes garlic, finely minced
2 jalapeno peppers, finely chopped
Freshly ground pepper

Mix chopped green onions, garlic, jalapeno peppers and about 1/4 tsp. each salt and pepper. Cut one half inch wide and one half inch deep slits in roast. Stuff each slit with mixed seasonings. Rub outside of roast lightly with salt and pepper. Wrap roast in foil and freeze.

When ready to cook, place frozen roast in 350 degree preheated oven. Cook for 2 1/2 to 3 hours or 30 to 45 minutes per pound. Meat thermometer should read 175 degrees F. About 30 minutes before roast is done open foil and let roast brown. Great with Louisiana Baked Yams. Serves 8.
