CRISPY CHEESY CHICKEN 
2 lbs. chicken strips or chicken breast, cut
1/2 cup whole milk
4 tbsp. sour cream
3 cups shredded or grated cheese (I use mild cheddar)
4 sleeves Ritz crackers (I use the garlic onion & herb)
4 tbsp. butter (optional)
20 Oz can Cream of Chicken

Wash chicken and place in bowl of milk & preheat oven at 400F. Crush Ritz crackers and place in a separate bowl. Place cheese in another bowl. Press chicken into cheese until coated on both sides. Press into crushed Ritz until coated on both sides.

Place chicken into a baking dish sprayed with olive oil. Cover dish and bake for 30 minutes. Remove cover and continue to bake 15 minutes. After placing chicken back in oven, combine sour cream, butter and Cream of Chicken. Heat on low heat on stove top until heated through.

Remove chicken from oven and serve with sauce on top and enjoy.

*My fiance' normally like this made with mashed potatoes and loves the sauce on those as well. its really quick and simple you can use plain ritz if you prefer this is the way my family likes it."
