BANANA BRAN MUFFINS 
1 1/2 c. all-purpose flour
1/2 c. natural bran
1/2 c. brown sugar or equivalent of Sweet & Low
1 tsp. baking powder
1 tsp. baking soda
Pinch of salt
1/2 c. butter
1/2 c. sour milk or buttermilk
1 tbsp. molasses
1 egg
3/4 c. raisins
1/3 c. chopped nuts
3 c. mashed bananas

Combine flour, bran, baking powder, baking soda and salt. Stir well. Cream butter, sugar and eggs. Stir in banana, sour cream and molasses. Add raisins and nuts; pour in well greased muffin tins 3/4 full. Bake at 375 degrees for 20-25 minutes or until top springs back when touched. Makes 1 dozen. These will freeze well.
