|KIELBASA AND POTATOES|
8 slices thick sliced bacon, diced
2 lg. onions, chopped
6 lg. potatoes, cooked, peeled and cut into 1 inch cubes
1 Polish Kielbasa or 2 lbs. Italian sweet sausage
2 red bell peppers, cut into 1 inch sq.
Salt and pepper
In a large skillet, fry bacon until brown and crisp. Remove and set aside.
Add onion to drippings and saute until golden brown. Add potato cubes and stir over low heat until potatoes are slightly browned, about 15 minutes.
Cook Kielbasa in boiling salted water for 15 minutes. Drain and cut into 1/2 inch slices. If using sausage, brown on all sides and cut into 1 inch slices. Add Kielbasa or sausage to potatoes. Add red peppers and stir over low heat for 10 minutes. Season to taste with salt and pepper. Sprinkle with bacon.
