PRESSURE COOKER MEATLOAF | |
(This recipe is for those experienced with pressure cookers.) 1 1/2 lb. ground chuck 1 can tomato sauce 2 c. cracker crumbs 2 eggs 1/2 c. chopped onion 1/4 c. chopped green pepper Salt & pepper to taste Combine all ingredients and form into 2 or 3 small round loaves (whatever fits in your pressure cooker). Fill bottom of cooker with 2 cups water and place loaves in pan. If desired, place aluminum pie plate, with slits in plate, over meat and layer peeled potatoes and carrots on top of plate. Place lid on cooker with pressure gauge. Cook on store top on high heat until gauge begins to jiggle, then reduce heat to medium high and cook about 10 minutes. Meatloaf will be very moist, unlike conventional oven meatloaf. Remove meatloaf from cooker, spread butter on top and broil in oven until lightly brown. |
