2 c. flour
1 tsp. baking soda
3/4 tsp. salt
1/2 c. butter, softened
1 c. brown sugar, packed
2 eggs
1 tsp. vinegar in 1 tbsp. milk
1 tsp. vanilla
1 1/2 c. mashed ripe banana
1 c. coconut

Sift flour, soda, and salt. Beat the butter, sugar, and eggs, one at a time, beating well after each egg. Beat in milk mixture, vanilla, and banana. Gradually add the flour mixture until just blended. Fold in the coconut. Pour into a greased and floured 9 x 5 inch loaf pan and bake at 325 degrees for 1 hour or until bread tests done. Cool, wrap in foil, and store for 24 hours before slicing.

Makes 1 loaf.
