QUICHE LORRAINE 
8 oz. 97% fat free ham or Canadian bacon
6 eggs (equivalent egg substitute, 1 1/2 c. Egg Beaters)
1 c. skim milk
1/2 c. minced onion
1 tbsp. chopped chives
1 sm. can mushrooms
10 oz. grated low fat cheese
Dash each of nutmeg and pepper

Coat a 9 ounce pan with cooking spray and arrange ham in dish. Beat eggs, add milk, onion, chives and seasoning. Mix well. Stir in grated cheese. Pour mixture over ham or Canadian bacon. Bake at 325 degrees for 35 to 45 minutes, or until a knife inserted in the center comes out clean.
