"DIABETIC" RAISIN CAKE 
1 c. raisins
Liquid sugar substitute equal to 3/4 c.
3 lg. egg whites
1/2 c. oil
1 1/2 tsp. vanilla
1 c. unsweetened applesauce
2 c. plain flour
1 tsp. baking soda
1 tsp. baking powder
1 1/4 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt

Cover raisins with boiling water. Let stand 5 minutes; drain. Place raisins in mixer bowl; add sweetener, egg whites, oil, vanilla, and applesauce; mix at medium speed for a few seconds. Blend remaining ingredients well and add to mixture. Mix well. Spread in a 9 x 13 inch pan which has been greased with butter. Bake at 350 degrees for 35-40 minutes or until well browned and sides have draw away from pan. Yield: 20 pieces. If on low sodium diet, omit salt.
